Here is a little story about how we ideated upon this delectable combination that left us thinking… hey the idea is so simple, why has no one thought of this before?
It was over a breakfast stop at a spice farm where we happen to strike a conversation with the host about his pineapples. If you know Goan’s, you know how seriously they take their jams. It is a loyal and loved companion during breakfast and occasions like Easter and Christmas. We found out that this sun-kissed fruit was actually introduced to Goa by the Portuguese in the 16th century and has since found its way into Goan hearts and kitchens though a number of different recipes passed down form generations. (he kindly let us in on the secret later). We were also having poe (bread) and curry spiced with kola chilies when I happen to take a bite of the jam and the curry together (I know, ew). But hey, that unsavory bite gave way to a very savory idea!
